Chefs to interact with diners - pulling fresh pasta and cutting captivating crudo while bartenders are shaking up original craft cocktails.
 
Minneapolis, MN - An established entrepreneur in the culinary world, restaurateur Paul Dzubnar and his operating partners today announces the launch of their newest Minnesota based dining offering - Scena Tavern.  The casual yet upscale eatery showcases Mediterranean flavor profiles while putting its own unique signature to the dining experience within a two story restaurant that offers two patios and open and airy tall ceilings.   At the heart of the restaurant is a large round bar that will seat 25.  An open kitchen will showcase several types of pasta made daily, including fresh rolled and extruded varieties.  A separate Crudo bar will allow diners an intimate demonstration of their fresh raw fish and shellfish offerings, along with cocktails designed by the Bittercube team to perfectly match the delicate flavors of the crudo bar.
 
Located in the heart of Uptown at 2943 Girard Avenue South (cross street of Lake Street), Scena Tavern will be open from 11AM-1AM Monday-Thursday, 11AM-2AM on Friday & Saturday, and 11AM - 1AM on Sunday.
 
Consulting on the kitchen and menu are Jamie Malone, Food & Wine Magazine’s Best New Chef of 2013, and formerly at Sea Change and Porter & Frye, and Erik Anderson, Food & Wine Magazine’s Best New Chef of 2012, and formerly at The Catbird Seat, Sea Change, and Porter & Frye. They will be selecting an Executive Chef and are also pulling together the staff and will conduct ongoing training.
 
The menu will feature fresh, seasonal ingredients and signature menu items such as Carbineros with black olive salt (prepared live at their Crudo bar), house-extruded Canestri with potato broth and wild mushrooms, and many shareable dishes, including steamed clams with N’duja and flatbread with scrambled eggs and Sunday gravy.
 
The Cocktail and Bar Program is being developed by Nick Kosevich of Bittercube and formerly of Town Talk Diner. Kosevich is planning a selection of artisanal and historical cocktails that will pair well with the delicate and nuanced flavors of the menu. Chefs will craft cocktails to match the Crudo selections at the Crudo Bar. The taps will be filled with local brews.
 
Dzubnar commented, "Scena is Italian for 'scene' or 'stage'. Our restaurant will put our dining offerings in the spotlight as we crafted our 7,500 square feet into a two level space that both puts our chefs and bartenders on center stage.  We've designed a large circular bar on the main level that encourages social conversation with patrons as well as the skilled bartenders that offer a wide offering of craft cocktails, wine, and 30 craft beers - including many from local breweries. A curving staircase leads up to a mezzanine level that houses a second bar that while servicing cozy dining nooks and a patio to aid in the al fresco enjoyment of a Minneapolis sunset skyline view."
 
Smart & Associates was tapped for interior design for the new build.  "Scena will offer wide open views through the use of large doors that literally open the restaurant to the street," said Smart.  "The energy and movement from within spills onto the sidewalk making the entire first floor feel like it is part of the sidewalk dining scene."
